Sir fried squid with bell peppers
For those who do not like squid very much, you may change your opinion after trying this dish. I follow this recipe for this stir fry, but to sum up here, let's assume you already know how to clean a squid, what you need to remember is to first parboil/ blanch the squid in boiled water for 10-20 seconds, then stir fry the veggies with some chopped ginger, garlic and white part of spring onion.
When all ingredients seem almost done, add the squid, stir fry for 1-2 minutes (you should do this quick because squid becomes hard and rubbery if you cook longer than 2 minutes). Finally, add the sauce below and stir fry for 10-15 seconds before turn off the heat completely.
The sauce formula for stir fried 1 squid and 2 small bell peppers (of different colors) is 1 tbsp cornstarch, 1 tbsp cooking wine (sake is fine), 1 tbsp soy sauce, 2 tbsp oyster sauce, 1 tbsp water ,1 tsp sugar, 1 tsp sugar, 1 tsp black pepper, 1 tsp dark soy sauce. In my opinion, 1 tbsp of cornstarch can be too much so let's reduce to 1/2.
