Oysters in cream


This dish is quick and I have made many times again and again. You need to prepare 7-8 fresh oyster.

Step 1: Sprinkle some salt on the oysters and wash them under gentle water.

Step 2: Sprinkle some salt (about 1/5 tspn) and flour (2-3 tbsp) on oysters and mix well. Do not add too much salt because oysters are already salty by nature.

Step 3: Pan fry the oysters in step 2 both sides until they are golden brown. Then take them out.

Step 4: Pour into the pan: 2 tbsp of sake or shochu, 4 tbsp of fresh cream, a little bit of salt. When it simmers, put oysters back in, and wait for a gentle boil (just a few seconds later), then dish oysters out.

Step 5: Sprinkle with black peppers and lemon zest.
