Pumpkin cucumber salad
It is the first time I made pumpkin salad. If pumpkin is all by itself, it will not be so enticing. However, when it is accompanied with fresh cucumber, you will be curious enough to eat it up. The fresh crispy cucumber will boost up the subtle sweetness inside pumpkin.
Step 1: Prepare 1/4 pumpkin (300-400gr), seeds out, skin stays.
Step 2: Put 10g of butter onto the belly of the pumpkin, and put this couple onto a wide bowl. Cover this bowl with wrapping film and transfer them to a microwave. At 600M, let them be for 8 minutes.
Step 3: Meanwile, slice 1 cucumber into circles. Sprinkle with salt, leave 5', then squeeze out water.
Step 4: Take pumpkin out of microwave. Now you will see butter has melted and both the flesh and the skin of pumpkin have been well steamed. You will use a fork to smash pumpkin and mix well everything in the bowl. Add mayonnaise and a little salt (appropriate quantity) in the bowl and continue mixing.
Step 5: Add cucumber into the bowl and continue mixing. Then, your dish has been ready.
