Pork belly slices salad


I learnt this dish from a Japanese cook book. It’s easy and delicious and everyone should try.

On top: chopped cucumber (1), chopped okras (5-8), sweet corn (1), chopped onion/shallot (1/4 onion or 1 big shallot), chopped tomato (1 medium). Mix all together with 1 tbsp of: soy sauce, honey, vinegar, olive oil, and a little bit of peppers. Chill the mixture for 1 hour.

At the bottom: thinly sliced pork belly (300-400g) dipped in boiling water, then drained and mixed with a little bit of salt. Do not pour cold water through the meat.

Tips:
  • Onion should be soaked in ice water for 30 minutes and rinsed well before mixing. This way will remove some of the pungency and soften the flavor of onion.
  • Okras should be very quickly dipped in hot water and then in cold water before chopping because it has a gel-like substance that can mess up your mixture.
  • Sweet corn when boiled needs some salt in the boiling water so to boost its sweetness. After getting soft, move it quickly to the cold water before cutting along the core.
