The recipe is here or here. This dish has the sweetness of both burdock roots and carrots, so it's wonderful for sweet lovers.
Burdock roots are rich in inulin, a soluble dietary fiber, and they are good sources of calcium, potassium, iron and amino acids. However, burdock can increase dehydration, so you should drink a lot of water when eating it. Also, pregnant women should not eat burdock roots as it may cause damage to the fetus (although I have relentlessly searched for reasons but not yet found out).
