Pan fried pork belly in fish sauce
The recipe is quite simple, but you must have fish sauce (of course).
Step 1: First you slice pork belly, then you pan fry them with very little oil. After a few minutes, when they start to turn brown (do not fry them too long or they will end up very hard to bite), take them out. Clean the pan so that it is not too oily.
Step2: Still the same pan. Add 2 tablespoons of brown sugar. Wait for it to caramelize. Add the pork belly back to the pan and stir for a bit. Then add 2 tablespoons of fish sauce and 1 tablespoon of brown sugar. stir well until they have a nice cockroach color (this is how we Vietnamese describe our food, yes).
Add some green veggies to garnish (such as spring onions or green fresh pepper).
