Deep fried chicken wings in fish sauce



Below is the recipe for 8 chicken wings of normal size.

Step 1: Wash and dry chicken wings with the kitchen towel. Score chicken wings so that the spices can penetrate the meat when on pan.

Step 2: Heat the frying pan at medium level. When the pan is hot, pour 1 tbsp of oil in. When the oil is hot, put all wings to the frying pan, wingette down. When the flat is golden, turn all wings. This step should not be too long because chicken wings being fried too long will get dry to eat.


Step 3: With wingette down, add chopped garlic and chili to the pan. When the garlic turns brown, put 2 tbsp of sugar (I like brown sugar) to the middle, wait for it to caramelize, then pread it out under all wings.


Step 4: Cover the pan with aluminum foil and the lid. Keep medium heat for a few minutes until the wingette gets brown and glossy. You can turn the wings several times during the way. 

 
The color like this means the wings are ready to serve.
