Braised pork belly




Braised pork belly has been my signature since I got the praise from so many people. It is simple but not everyone cooks it the same way. My recipe is as follows (I omit quantity):
  1. - marinate pork belly with fish sauce, salt, msg, sugar, soy sauce, chili powder, black pepper powder for 30 minutes;
  2. - caramelize sugar in a pot until it is a bit dark brown (this is important: not black and not brown);
  3. - pour a bowl of water into the caramelized sugar and stir;
  4. - add the marinated pork belly in, stir and low heat for about 1 hour. 
Some people cook for just 30 minutes and think it is done. Actually braised meat needs at least 1 hour to be totally cooked. You can even let it rest over night and recook in the morning to get the best taste.
