Chicken gapao rice



For 2 persons, all you need to prepare is 200g of ground chicken, two to three halves of bell peppers in different colors (here I chose orange, yellow, and red) cut into bite-sized pieces, and fresh basil. For spices, you’ll need salt, pepper, fish sauce, oyster sauce, and sugar. Also, prepare 1/4 cup of chopped onion and 3 cloves of chopped garlic.

Step 1: Heat a pan and add some oil. Sauté the onion and garlic until fragrant, then add the chicken and stir-fry.

Step 2: Stir in the bell peppers and half of the fresh basil. Sprinkle with chili flakes, and add fish sauce, oyster sauce, salt, pepper, and sugar to taste (you can do little by little). Mix until the spices are well blended and the ingredients are fully cooked.

Step 3: Serve the dish by placing rice on one side of the plate and the chicken mixture on the other. Garnish with fresh basil and a piece of lime for extra flavor.

The original version of Gapao rice is probably more complex, but I'm happy with this simpler method. Just make sure the chicken remains tender when you bite into it. Enjoy!
