Ajillo

 This is our favorite for breakfast. It is delicious and stylish. It keeps our stomaches full till noon. And, it is so easy to make.

Ingredients:

  • Shrimps: about 8-10 shrimps, depending on size
  • Octopus: about 150-200gram, cubed
  • Garlic: slice generously 3 big cloves
  • Olive oil: 100ml
  • Dry chilli: cut a dry chilli into small pieces
  • Chilli flakes: to add during cooking
  • Salt: sprinkle during cooking
  • Pepper: to add during cooking
  • Lime juice: 1 half, to add during cooking
  • Fresh parsley: to add in the end

Step 1: Put a pan sized 20cm onto a stove and make it hot (heat 4/6). Pour generously 100ml of olive oil to the hot pan. Do not make it boil. Olive oils is great when its molecules move around to make a little wave on top.

Step 2: Put dry chilli, garlic slices, shrimps, octopus, chilli flakes, salt, pepper. Let it absorb the olive oil for a while. Taste a bit of shrimp during the process to adjust spices as wished. Squeeze half of a small lime and add chopped parsley towards the end of the cooking.

Step 3: While the Ajillo is simmering, toast some sandwiches. For 2 people, toast about 3 sandwiches and cut them in half.

Step 4: Dish out the Ajillo and eat with the crunchy sandwiches.
